Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. Being a full time at home mom and writer sounds like a lot of work and for good reason, it is. She loves every minute of the organized chaos that is her daily life. It is what fuels her ideas and inspires her to write the books she does. She loves to share what she knows and is always willing to learn something new. She loves to cook and create new recipes which you will find shared throughout her various cookbooks. She stays up to date on the most current diets but doesn’t particularly follow any one of them. She eats to enjoy while consciously watching her health. She knows people need a variety of recipes to avoid the boredom that leads to weight gain and tries to fill that void. Her passions don’t stop at cooking and she is an avid gardener, organizer and loves reading. She is known amongst the kids in the sports community as “the lady with the best chocolate chip cookies ever.” She enjoys being able to watch her children play sports and is quite active herself. In the end, you could call her a homebody. Charity is all about living life with passion and enjoying every moment. Life is about enjoying good food, great company and waking up every day happy to do it all over again.

Great Paleo Recipes!

This is a great book for people new to a Paleo Diet or those who have been on a Paleo Diet for years. I like the introduction for two reasons: it gave a brief explanation of what a Paleo Diet is and what it is not, and it is a rare diet book that gives you permission to not rigidly stick to it 100%. In an example the author talks of someone that follows the diet about 80% of the time and they are reaping the benefits and giving themselves a break.

Each recipe is well laid out and easy to follow. Serving sizes and nutritional information is provides for each recipe which you don't find in all cookbooks. I found this to be very helpful as I monitor my intake at different times. I like to try one or two recipes in each cookbook I review so here goes.

I work from home so I can take the time to cook my lunch or even eat a lunch recipe for my evening meal. I tried the Pork Carnitas which is a Mexican dish. I had some left over pork so I think that sped up the process. The rest was very easy and it was delicious. The second recipe I tried was Creamy Vanilla Yogurt. Again this was very easy to prepare and it was a great as part of my lunch and for dessert after my evening meal.

Charity Wilson has other Paleo cookbooks I have yet to try. I will be picking those up and trying them since this book was so good. If you like Paleo or are interested in trying it I would recommend this book.

Great collection of paleo lunch recipes!

Another great recipe book by Charity Wilson! I always do the same boring lunch. This book gave me plenty of new ideas like southern style dirty rice, the brussels sprout crispers, the cauliflower hash, the power booster beef jerky apple mix, the savory salmon cakes and many more. The recipes are well presented and the directions are clear and well detailed making it easy to follow and prepare each dish. All the recipes have nutritional information. and since they follow the paleo diet guidelines, they are healthy which is a big plus for myself and my family. Highly recommended for anyone wanting healthy nutritious lunch recipe ideas or if you follow a paleo lifestyle.

Great recipes but could use some improvement

As someone who is quite familiar with the Paleo diet, I do love how great these recipes sound! I can't wait to try them. I deducted one star because the author listed soy sauce as an ingredient when soy shouldn't be included with Paleo. On other recipes, coconut aminos was listed as an ingredient, which is a typical replacement for soy sauce. Also, I would love to see photos of the finished products.
