Vanilla Thumb Print Cookies
Makes 24 cookies
Ingredients:
•6 tbsp butter (50/50 balance butter)
•1 egg
•1 cup sugar substitute
•½ cup sugar free preserve C
•1 tsp vanilla extract
•2 tbsp 2% milk
•1 ¼ cups unbleached all-purpose flour
•¼ tsp baking soda
•¼ tsp baking powder
•¼ tsp salt
Method:
1.Preheat the oven to 350 degrees F.
2.In a bowl, beat sugar substitute and butter until they are well combined.
3.Add milk, vanilla and egg and mix until blended.
4.Add salt, baking powder and baking soda and mix again.
5.Slowly add flour and beat the mixture.
6.Shape the dough into 24 round balls.
7.Take a cookie sheet and press your thumb deeply into the center of the ball.
8.Bake in oven for 11 to 13 minutes.
9.Let the cookies cool completely, and then fill the thumb depression with sugar free preserve.
10.Let the cookies cool so that the preserve settles. Store in an airtight jar.

Good-bye Mrs. Fields! (for now at least)

I really love cookies (eating them mostly) and this has led to me spending a lot of money on Mrs. Fields or consuming unhealthy calories because I reach for a pack of oreos. I have made cookies before but only with Betty Crocker (delicious by the way) but there is something to be said about knowing exactly what goes into the food that you are eating.
This book contains several recipes that are easy enough to follow and are not at all confusing. The one I can't wait to try is the Apple Vanilla No Bake Cookies recipe since living in a dorm severely limits the cooking and baking materials at my disposal.

As what the title says, this book is very easy to follow. Detailed yet easy to comprehend instructions are a must for novice bakers like me. The recipes are appealing and I really want to try them all for my daughter. I personally love Banana Cookies because of its simple yet mouth watering taste. Bananas are always available too so finding the ingredients won’t be a hassle. That is one thing that I noticed as well while I am browsing through this book, the ingredients are trouble-free to find. This is best for moms who want to please their kids with healthy and delicious cookies.
